A Matter of Trust” is the 2nd single released for Billy Joel’s 1986 album “The Bridge”. A Matter of Crust is a scratch-made cottage bakery inspired by songs that was established in New Braunfels, Texas 2021.

My name is Erin. I’ve always had a huge love and appreciation for music (despite my lack of musical talent) and an even bigger love for the art of baking. I always enjoyed baking as a hobby when I was young, but I really got to hone my craft during the pandemic when I became the official baker at The Gruene River Hotel & Retreat in the Fall of 2020. A year of learning and encouragement from coworkers along with my support system at home led me to start selling Thanksgiving 2021 and officially opening my online store a month later.

From there, we kept up with the fun of occasional online orders, experimenting with recipes, and having fun coming up with names for our song-inspired creations until we had our first pop up in April 2022 and later found our home with the San Marcos Farmers Market that June! We took part in many different events and markets between Austin and San Antonio until we found our official 2nd weekly market in Buda, Texas July 2023.

We took the leap and began running our little home bakery full time in the Fall of 2023 and haven’t looked back! Our family grew along with the business as we brought our daughter into the world September 2024. The following year we partnered with Betty Lou Coffee Co. who so graciously allows us to keep some of our pastries in stock at her coffee trailer!

Being part of the farmers market community has allowed us to use locally sourced ingredients for many of our seasonal products (like carrot cake hand pies made with locally grown carrots!) You can find our little family every weekend in San Marcos and Buda with a spread of scratch-made unique pastries and desserts- always made with heart and soul (and a little rock and roll)
